This cut is seriously underrated. The flat iron—named for its appearance—is the second most tender piece of meat, after the filet. Unlike the filet, the flat iron comes from the shoulder of the animal and therefore contains more marbling. Its uniform shape allows for consistent cooking, and its beefy richness pairs well with a nice summer salad and a glass of light red wine.
